A healthy harvest : to obtain a floral « eau-de-vie », so representative of Grande and Petite Champagne vintages, it is important to harvest a healthy grape crop. This is the reason why we invest regularly in our equipment in order to shorten the time of the conveyance of our fresh grape harvest and to improve its quality. As soon as the grapes arrive at the production cellar, they are crushed so as to avoid any event of oxidation.
Our young vines, which are somewhat fragile, are picked by hand ; the rest of the vineyard being harvested mechanically.
